Seafood Satay
One portion made
Plate used: satay burner
Main dish: 250 gram,
Side dish: potato 100 gram
Seasonings: one small bowl of garlic butter
Garnish with 1/3 slice of lime
Method: Take measured ingredients and warm up
100 gram tenggiri fish boiled
100 gram calamari cut in half
50 gram prawns peeled with tail intact
6 pcs green pepper in 2cm cubes
6 pcs tomato wedges
6 pcs onion cubed
Place the ingredients in the sticks in order:
Tenggiri, green pepper, calamari, tomato,
Shrimps, onion. It will make three sticks
Grill all satay until just done then brush it with garlic butter before relishing

Method: take quantity ingredients and warm up
Warm 2 tbsp butter in a Teflon pan add to it 8 pcs cooked mushrooms, just warm
it
Add 2-3 large prawns peeled, tail intact
Add 1/2 pc tomato cut in 3 pcs
Add 2 pcs lemon leaves until just cooked
Add one slice fresh ginger
Add 2-3 pcs lemon grass
One pc green hot chilly and cook for 3 minutes
Take Thai fish stock almost 10 portions
Method quantity ingredients explanation
Boil 2 kg shrimp heads in 2 liters of water till is reduced by to its half a
litre. Filter and retain
Stir fry with 3 tbsp salad oil and 2 pcs red mild chili fine chopped
1 tbsp tom yam paste
Add all shrimp stock and put to a boil
Add 75 gram laos chopped
Add 5 tsp kecap ikan
Add 3 pcs lemon grass chopped
Add 10 pcs mushrooms chopped
Add 1/4 glass lime juice
Heat 10 pcs lime leaves chopped, finally mix with 2 tbsp sugar, and serve hot
in a dinner plate.
