THE TAJ

The two major segments of Indian cuisine are North Indian cuisine and South Indian cuisine. These two segments of Indian cuisine are very different in form from each other. North Indian cuisine involves a lot of items which are prepared in the Tandoori oven for example Nan, Tandoori Roti, Tandoori Chicken etc. Flat breads like Paratha, Kulcha, Puri, Roti etc are also very popular in North Indian cuisine. Another typical North Indian cuisine preparation is Samosa. It's a very popular snack of North Indian cuisine. On the other hand South Indian cuisine involves a lot of rice based items and the use of curry leaves and coconut is prevalent. This style of preparation is mostly practiced in the four South Indian states of India, which are, Karnataka, Kerala, Tamil Nadu and Andhra Pradesh. Though there are differences among the preparations of the four states however those are very minimal. So, on the whole they can all be clubbed under one head which is South Indian cuisine.
